Buttery, beautiful, creamy white cauliflower is in-season and in CSA boxes two times a year, in May and October. Our CSA from Doe Run Farms contained the most perfect beautiful head we were stumped as to what recipe would do it justice. We decided to keep it pristine and raw and slice it up for a Chopped Salad (along with green garlic, radishes and green onions) and dip the plump florets in creamy Hummus and Garlic Hummus. But we have also included recipes for roasting it and boiling it for a creamy mashed potato stand-in. We also have Chef Deb Paquette of Etc and Etch recipe for cauliflower with pea pesto and feta creme. However you eat it, seek out local at farmers markets around town.
