Garlic Scapes and Radish Greens Pesto

This pesto is perfect for any summer dish, but it's best tossed with tri-color pasta, served chilled. It's the perfect addition to any summer cookout. Recipe is a Jess Rice original.

Ingredients

  • 1 cup garlic scapes chopped
  • 1/2 cup walnuts
  • 3 Tbs nutritional yeast
  • 2 cups fresh basil
  • 1 cup radish tops, just greens
  • 1/2 shallot, finely diced
  • 1/2 lemon, juiced
  • 1 cup extra virgin olive oil
  • salt to taste
  • pepper to taste

Instructions

Add lemon juice, chopped garlic scapes, basil, and radish greens to food processor. Pulse for about 45 seconds or until a finely minced consistency begins to form. 

Add walnuts, nutritional yeast and shallot. Pulse until crumbly and well-combined. 

Drizzle in olive oil slowly while running the food processor. 

Taste. Add salt and pepper if needed. Toss with pasta, spread on a sandwich or serve with hummus
