This bacon-infused gravy resembles tomato sauce but is commonly called “gravy” in the South.

Ingredients

SERVINGS: 2 Cup(s)
  • 3 tablespoons bacon fat
  • 3 tablespoons all-purpose flour
  • 1 teaspoon fresh minced garlic
  • 1 1/3 cups chicken broth
  • 1 14.5 ounce can diced tomatoes, undrained
  • 1 teaspoon chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Preparation

1.   Heat bacon fat in skillet over medium heat. Add flour and whisk to combine, creating a roux. Continue to cook while whisking a few minutes, until it smells slightly nutty. Add garlic and cook 1 minute. 

2.  Slowly add chicken broth and whisk vigorously until smooth. Add remaining ingredients and simmer 5 minutes.
