Honey Chess Pie with Orange Zest and Thyme

Ingredients

  • 1/2 cup butter
  • 3/4 cup sugar
  • 1 tablespoon cornmeal
  • 1/2 teaspoon salt
  • 3 eggs
  • 1 teaspoon vanilla
  • 3/4 cup local honey
  • 1/2 cup buttermilk
  • zest of 1 orange
  • 1 tablespoon thyme leaves, roughly chopped
  • Maldon salt
  • 1 pie crust, parbaked 10-15 minutes

Preparation

1.  Preheat oven to 375F. Melt butter in large saucepan. Add sugar, cornmeal, and salt; stir to combine.

2.  In small bowl, whisk eggs and vanilla together. Slowly pour egg mixture into butter mixture while whisking vigorously to avoid scrambling the eggs. Add honey, buttermilk, orange zest, and thyme and stir well.

3.  Pour into prepared pie crust. Bake 40-45 minutes, until filling is golden brown. Filling will bubble a bit during baking, then set with a little jiggle. Cool completely. Sprinkle with Maldon salt to finish.
