Grilled Pork Chops with Peach Agrodolce

An agrodolce is an Italian sweet and sour condiment made with fruit, vinegar and sugar.

Ingredients

AGRODOLCE
  • 1 tablespoon extra-virgin olive oil
  • 1 small sweet onion, thinly sliced (about 1 cup)
  • 1 large peach, pitted and chopped (about 1½ cups)
  • ¼ teaspoon red pepper flakes
  • 1 bay leaf
  • ¼ teaspoon fennel seeds
  • 2 whole cloves
  • 1 star anise pod
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons brown sugar
  • Pinch of kosher salt

Preparation

1. To make the agrodolce, heat the olive oil in a small saucepan over medium heat. Add the onion and cook for 5 minutes. Add the remaining ingredients and 1 tablespoon water. Reduce heat to low, cover, and cook for 10 minutes, or until the onion and peach are very soft. Remove and discard the bay leaf, cloves, and star anise. Serve with grilled pork chops.
