Sweet Potato Rounds with Basil Pesto
Perfect fall appetizers that we served at our fall farm dinner at Katharos Farm. Sweet Potatoes from Delvin Farm with pesto and creamy goat cheese and spiced pecans. Yum.
1. Cut cabbage into wedges, leaving the root intact. brush with oil and place on grill or baking sheet. Grill or roast (at 475F) 25 minutes, until charred and tender. Drizzle with your favorite dressing and dust with grated Parmesan.
