Between myth and reality, local honey deserves more credits than it gets.
- ¼ cup sherry or balsamic vinegar
- 2 teaspoons Dijon mustard
- 1 tablespoon honey
- 1 clove garlic, minced
- ½ cup extra virgin olive oil
- chopped fresh basil
- salt and pepper
Combine all ingredients in a bowl or jar, whisk or shake.
Toss with lettuce, kale or vegetables.
