Argentinian Cooking at Our Fall Farm Dinner With Panoram Asados

Fires are good for the soul, whether you’re reclining in front of one, drink in hand, or cooking over one. Cooking over a live fire is something we frequently do at our Farm Dinners, but not to the extent we did at this past one with Chef Mariano Cebrián and his wife, Angelina. This dinner was prepared completely over a live fire.
Our 2023 fall farm dinner at Heirloom Farm in Franklin Tennessee took place with a back drop of sunflowers, live fire cooking and pumpkins. Chef Mariano cooked a local meats from Peaceful Pasture Farms in the Argentinian style with Chimmichuri sauces and Latin spices. They kept the fires stoked as they roasted local pigs, whole chickens and ribeyes wrapped in Giffords bacon. Edible Chef Skylar Bush worked along side the chefs and served arugula salad with chicken, pepitas, sweet potatoes and goat cheese. Brioche rolls from Village Bakery + Provisions were served as well as their cornmeal pound cake with whiskey grilled apples and Mascarpone gelato from Bravo gelato. Guests whetted their apetites with cocktails from Uncle Nearest, Botanist Gin, and the divine brews from Harding House Brewing Co. Music from crooner Jed Harrelson started Friday evening as the cool jazz trio Gubernaughts took us into Saturday. Reba also joined us in spririt with Okra and Shishitos with Tequila Lime Vinaigrette from her new cookbook served and her new CD’s Not That Fancy distributed in the swag bags to all guests.
