"Not so long ago, I was living the busy life of editor-in-chief at a Dallas magazine. These days, I’m living the busy, stay-at-home life of chasing babies in Nashville. Though the overall similarities are minuscule, I’ve learned these lives aren’t so different when it comes to my culinary desires. I may be eating in a different setting, but I still want whole, organic, local (when available), fast, effortless meals. My boys are three years old and eight months old, and both lack patience and empathy when it comes to mealtime. My goal is always to give my family the best quality in the least amount of minutes. These sweet potatoes are made in 30 minutes or less. I’ve given my kids so many sweet potatoes that they won’t even look at a white potato. This is a recipe I often do to avoid the standard purée or mash and it’s easy to throw in the oven while I’m prepping the rest of our dinner."-- Samantha Baize Creamer
