Samantha's Roasted Sweet Potatoes

Samantha Baize Creamer's spiced roasted sweet potatoes even her kids adore.

Ingredients

  • 2 sweet potatoes, diced into 1-inch cubes
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon pure maple syrup or honey
  • 1 lime, juice and zest
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon fresh rosemary, chopped

Preparation

Preheat oven to 375.

Place diced sweet potatoes in a large bowl. In a small bowl, whisk together remainder of ingredients. Drizzle over sweet potatoes and stir until well coated.

Spread sweet potatoes evenly on a baking sheet. Cook in oven for 20 minutes, stirring once.
