White Bean Salad with Pesto, Arugula and Burrata

You can use any kind of pesto in this pasta. We made it with Green Garlic Pesto, fresh arugula and creamy burrata cheese.

Ingredients

  • 4 cups white beans, cooked (either canned or cooked from dry)
  • 1/4 cup pesto (Garlic Scape, Arugula, Kale or Basil)
  • 2 cups chopped fresh arugula
  • 4 ounces Burrata cheese
  • salt and pepper to taste

Preparation

1. Place beans, pesto and chopped arugula in a large bowl. Mix well. Spoon into individual bowls and top each with burrata.
