Farmer Pat Schertz of Rosie Belle Farm is an accomplished cook and caterer. From the bounty of their farm in Pulaski, Pat makes all manner of breads, crackers, cheese, yogurt, fermented items, sauces, hummus and pestos. In the summer when it’s too hot to cook, she serves this pesto with a mezze platter of homemade feta cheese, crispy za’tar flatbreads, creamy hummus, tomato-cucumber salad, pickled carrots and olives.
