Curly, Tuscan, Purple, Dinosaur or Siberian, kale is April's green.

In April, pickings are still a bit slim for produce, but kale can always be counted on. Hardy in cold weather, it's abundant in March and April as well as October. 

Kayne Prime's Kale Salad

This is hands down the best selling side at Kayne Prime Steakhouse. They make it in huge quantities. As the kale isn't cooked, the key is to finely chop the kale in a food processor.
