Bet you didn't know today (October 7) is National Kale Day. Yes there's an entire website dedicated to it, Nationalkaleday.org, with Kings of Kale, Kale 101 and Kalebrations. Or maybe you did. Kale is all around us today and chances are many others are celebrating it as well. Kale cake anyone?

Well we like to keep it simple and sensible. Here is a round-up some of our favorite recipes with kale; soups, curries, pesto, and a dynamite galette. Enjoy.
