Mushroom Tacos

Lion's Mane mushrooms are sliced and layered with hot sauce, slaw, and pickled celery or carrots for a fresh, flavorful vegan taco at Cafe Makai

Ingredients

  • 1 tablespoon olive oil
  • 8 ounces sliced Lions Mane mushrooms
  • 1 tablespoon honey
  • 2 teaspoons hot sauce, more or less
  • 2 8-inch flour tortillas
  • 2 tablespoons pickled celery or carrot
  • 2 tablespoons slaw
  • 1 tablespoon pickled peppers

Preparation

1.  Heat oil in skillet over medium heat. Add Lion's Mane and sear until browned, about 10 minutes. Drizzle with honey. Remove from skillet and toss mushrooms in hot sauce.

2.  Place on tortillas and top with celery, slaw of your choice, and pickled peppers.
