Ingredients
bourbon bbq sauce
- 1 tablespoon olive oil
- 1 cup minced onion
- 1/4 cup minced garlic
- 3/4 cup bourbon, plus extra for sipping - Machenry's likes Four Roses
- 2 cups ketchup
- 1/4 cup Worcestershire sauce
- 3 teaspoons molasses
- pinch salt and pepper
- 1/2 cup brown sugar
- 1 teaspoon tobasco
- 1 teaspoon liquid smoke
- pinch each garlic powder, onion powder, and smoked paprika
meatloaf
- 1 pound ground beef
- 2 eggs
- 3/4 cup Panko breadcrumbs
- 2 tablespoons bourbon BBQ sauce
- 1 tablespoon Worcestershire sauce
- 1 tablespoon garlic powder
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped red bell pepper
- pinch salt and pepper
Preparation
1. To prepare BBQ sauce, heat oil over medium high heat in medium saucepan. Add onion and sauté 10 minutes. Add garlic and sauté 5 minutes more. Add bourbon and let reduce by half, about 10 minutes.
2. Reduce heat to medium, add remaining ingredients, and simmer 15 minutes, stirring occasionally. Place in jars and refrigerate.
3. To prepare meatloaf, preheat oven to 375F. Combine all ingredients in large bowl and mix by hand.
4. Press meatloaf mixture evenly in 9x4-inch loaf pan. Cover with foil and bake 45 minutes to 1 hour or until internal temperature reaches 165F. (Top with bourbon BBQ sauce for last 10 minutes of baking.)
5. Slice meatloaf and serve with extra bourbon BBQ sauce.
