Mushroom Toast

This is served at Café Makai and delivers a big hit of umami due to its double mushroom usage. A paté-like mixture (made from the cooked stems and trimmings of mushrooms) is spread on toast, then topped with mushrooms and onions.

Ingredients

  • 2 tablespoons butter
  • 1/2 cup diced shallot or onion
  • 3 cups chopped mushroom stems, caps, and trimmings
  • 1/4 cup chopped parsley
  • 1 tablespoon Dijon mustard, optional
  • salt and pepper
  • assorted mushrooms and slivered onions
  • toast

Preparation

1.  Melt butter in heavy skillet. Add shallot and cook 5 minutes. Add mushrooms and cook 20 minutes or until tender. Add parsley, mustard (if desired), salt, and pepper. Let cool. Add to food processor and pulse until finely mixed and emulsified.

2.  Spread paté on toast and top with mushrooms and onions.
