Bread Pudding with Feta and Garlic Scape Pesto

Any kind of pesto can be used in this savory bread pudding, but we like it in the spring made with a simple pesto made from garlic scapes, olive oil and lemon juice whirled up in a food processor. Garlic scapes (as well as green garlic) is available at farmers markets in May and June.

    Ingredients

    • 6-8 cups bread cubes
    • 6 eggs
    • 3 cups milk or half-and-half
    • salt and pepper
    • 4 ounces crumbled feta cheese
    • 1/2 cup garlic scape pesto

    1. Break bread into cubes. Place in a 9 x 13-inch baking dish. Combine eggs and milk or cream. Pour over bread cubes. Sprinkle with feta cheese. Dot with garlic scape pesto. Cover and refrigerate over night or bake immediately.

    2. Preheat oven to 375F. Bake bread pudding 40-50 minutes or until puffed and golden. Serves 10.
