What to do with Garlic Scapes: Pesto

Garlic scapes, the green stem of the young garlic and harvested in spring before the garlic bulb, is a cross between green onions and garlic. We hope them up and poss in pasta and bean salads. They also make a great simple pesto of sorts, whirled up with olive oil and salt and pepper. Or make your favorite pesto and use scapes in place of the garlic.

    Ingredients

    • 4 green garlic stalks, bottom and green part, chopped
    • juice of 1 lemon
    • salt and pepper, to taste
    • 1/4 cup olive oil (or until pesto comes together)

    Preparation

    1. Place green garlic in bowl of food processor. Pulse until chopped small.
    2. Add lemon, salt, pepper and olive oil. Pulse until pesto comes together and is creamy.
    3. Makes 1 cup. Toss on pasta, pizza, or use as a spread on sandwiches.
