Spring Herbs: Chives

Spring brings robust bright mint, green onions, arugula and…delicate chives. We love that they come back every year and regenerate themselves quickly when cut. They have a natural propensity for other Spring harbingers, ie. egg dishes, such as egg salad, and Avgolemono (Greek Lemon Soup), but also white bean salad and scones. An added bonus, if you can keep from cutting them, is the bright purple pom pots they sprout in the spring. Perfect for cutting and putting in a vase.
