Bijoux Macarons: French Delicacies in Nashville

We ran into Chef Vincent Guiheneuf at the Nashville Farmers Market where he sells his utterly gorgeous macarons, Bijoux Macarons. In French, “bijoux” means jewels. These pastries come in every color of the rainbow and if you’ve ever been to France or want to just pretend for a moment, his macarons will transport you instantly.
Vincent shared that it was his mother’s love of cooking and growing her own ingredients that originally inspired him to become a chef. As a classically trained French chef, he completed six years of formal culinary education, graduating with three culinary degrees and spent the first 10 years of his career working in Michelin-starred restaurants throughout Europe and Australia as a fine dining savory chef.
In 2017, he had the opportunity to teach the CAP pastry exam in France, where macarons are one of the most challenging desserts. This experience inspired Chef Vincent’s transition into pastry. Making macarons appealed to his attention to detail and passion for unique flavor combinations, which led to the creation of Bijoux Macarons, originally as an online macaron class that same year. A few of the unique flavors offered are: rose-lychee, Italian pistachio, passion fruit, Earl Grey tea and chocolate grad cru.
In 2018, he moved to Los Angeles, and expanded Bijoux Macarons into an online pastry shop. After five years of operating Bijoux Macarons in Downtown Los Angeles, Vincent relocated to Nashville, Tennessee where he continues his online shop, as well as offering macaroons in various locations around the city, including the Nashville Farmers Market. Chef Vincent’s mission is to showcase French macarons at their finest and we daresay he is doing exactly that.
