Winning Lemon Chess Pie at The East Nashville Farmer's Market Pie Contest

Every July the East Nashville Farmers Market hosts their Annual Pie Festival, and this year the judges swooned over this deep dish lemon chess pie from first place winner, Samika Cohen. Enjoy.

Ingredients

Crust
  • 1 1/4 cup flour
  • 1/4 teaspoon salt
  • 1/2 cup butter, chilled and diced
  • 1/4 cup ice water
Filling
  • 4 eggs
  • 1 1/2 cup sugar
  • 1/2 cup lemon juice
  • 1/4 cup, melted butter
  • 2 Tablespoon flour

Preparation

Pie Crust
Combine flour and salt. Cut in butter with a pastry blender or in food processor until mixture resembles coarse crumbs. Stir in water a tablespoon at a time, until mixture forms a ball. Wrap in plastic and refrigerate for 30 minutes. Roll out pastry to a 13-inch circle. Place in 9-inch deep dish pie plate. 

Filling
1.Preheat oven to 350F.  In large bowl, beat eggs for 2 minutes. Add sugar beat 2 minutes. Add lemon juice, butter, and flour.

2. Pour in pie shell. Bake at 350°F for 35-40 minutes. Chill well. Serves 12.
