Watermelon Cucumber Salad with Feta and Mint

Ingredients

Salad
  • 4 cups cucumber, seeded, peeled, and cubed
  • 4 cups cubed watermelon
  • 1/4 cup slivered red onion
  • 1 cup noble springs goat feta cheese or your favorite feta
  • 1/2 cup torn fresh mint leaves
  • 2 basil leaves, chiffonade (sliced thinly)
Dressing
  • 1/3 cup fresh lime juice
  • 2/3 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 minced mint leaves

Instructions

Combine cucumber, watermelon and red onion. To make the dressing, whisk ingredients together. Just before serving, add dressing to watermelon mixture, toss gently and top with feta cheese. Add chopped herbs to garnish. (Don't mix this salad ahead of time as the watermelon and cucumber will water out and you will have soup!)
