Ingredients
- 2 cups flour
- 2 tablespoons sugar
- 1/4 teaspoon salt
- 12 tablespoons cold butter, cut into small pieces
- 2 pounds peaches
- 1/4 cup tubinado (or brown sugar)
- 1/4 cup white sugar
- 2 tablespoons flour
- 2 tablespoons fresh lemon juice
Preparation
1. To prepare crust, place flour, sugar, and salt into food processor (or large bowl). Pulse to mix well. Add cold butter in small pieces. Pulse or combine with a pastry blender until mixture looks like coarse meal (or pieces about the sizes of peas). Add water and pulse until mixture forms a ball. Remove dough, and shape into 2 discs, one slightly larger than the other, and wrap in a floured plastic wrap. Chill.
2. Preheat oven to 375F. Peel, pit and slice peaches. In a large bowl combine peaches, flour, white and turbinado sugar, lemon juice and toss gently. Pile peach mixture into prepared pie crust. Top with remianing pie crust. Bake 45 minutes or until golden and peaches are bubbly. Cool. Serves 10.
