Samika’s Winning Lemon Chess Pie

    Ingredients

    • 1¼ cups flour
    • ¼ teaspoon salt
    • ½ cup butter, chilled and diced
    • ¼ cup ice water
    • 4 eggs
    • 1½ cup sugar
    • ½ cup lemon juice
    • ¼ cup melted butter
    • 2 tablespoons flour

    Pie Crust

    1. Combine flour and salt. Cut in butter with a pastry blender or in food processor until mixture resembles coarse crumbs. Stir in water a tablespoon at a time, until mixture forms a ball. Wrap in plastic and refrigerate for 30 minutes. Roll out pastry to a 13-inch circle. Place in 9-inch deep dish pie plate.

    Filling

    1. Preheat oven to 350F. In large bowl, beat eggs for 2 minutes. Add sugar and beat 2 minutes. Add lemon juice, butter, and flour.

    2. Pour in pie shell. Bake at 350°F for 35-40 minutes. Chill well.
