Few dishes sing summer as much as the classic Caprese Salad. The perfect combination of juicy local tomatoes, creamy fresh mozzarella and garden fresh basil drizzled with good extra virgin olive oil and an aged balsamic.

Ingredients

  • 3-4 summer tomatoes (heirloom, Bradley or Cherokee Purple)
  • 4 ounces fresh mozzarella cheese
  • fresh basil (Genovese or Italian)
  • 3 tablespoons good olive oil
  • 2 tablespoons good aged balsamic vinegar or balsamic syrup
  • coarse sea salt and pepper

Preparation

1. Arrange tomatoes and cheese on a plate. Drizzle with oilve oil and balsamic. Sprinkle with basil leaves, coarse sea salt and pepper.
