Black Bean Kale Salad with Goat Cheese

With a bag of dried beans in the pantry, and kale and goat cheese in the fridge this salad assembled itself. And I borrowed a red onion from my sister, as, well, you can't make black bean salad without red onion....ever.

Ingredients

  • 3 cups cooked black beans (either canned or dried and cooked)
  • 1/2 cup chopped red onion
  • 1/2 jalapeno chile, seeded and chopped
  • 2 cups chopped raw kale (or other greens)
  • 1/2 lime, juiced
  • 3 ounces honey goat cheese (we like the one from Trader Joe's)
  • salt and pepper

Preparation

1. Combine beans and remaining ingredients in a bowl, stir gently. Serve.
