Skylar’s Spinach Florentine

This simple side dish of creamed spinach is often the base for chicken or eggs. It’s best in the spring or fall when tender young fresh spinach is in season. Don’t skimp on the amount of spinach, as it cooks down significantly. Best served with roast chicken or beef.

    Ingredients

    • 2 tablespoons olive oil
    • 1 clove garlic, minced
    • 1/2 yellow onion, chopped
    • 1 pound fresh spinach leaves
    • 1 egg, beaten
    • 1.4 cup grated Romano or Parmesan cheese
    • 1 tablespoon butter

    1. In a skillet saute onion and garlic in olive oil. Add spinach and saute for about 5 minutes until cooked.
    2. Add beaten egg and continue to cook until egg is cooked. Add butter and cheese. Serve with additional cheese.
