ROAST CHICKEN AND VEGETABLES

Roasting a chicken is a skill everyone should have. Stuff your chicken with lemon, half an onion and herbs to provide moisture so the breast does not dry out as the dark meat finishes cooking. Tie your bird up: wings tucked in and legs brought up to the breast to ensure a nice even package. Roast breast-side up on higher heat first until the skin browns and crisps, then drop the temperature down and roast low and slow to get that perfect restaurant-quality skin and tender meat. 

    Ingredients

    • Chicken:
    • 1 4-pound whole chicken, patted dry
    • Salt and pepper
    • 1 lemon, quartered
    • 3 rosemary sprigs
    • 2 thyme sprigs
    • Herb butter:
    • 1 stick unsalted butter, softened
    • 3 garlic cloves, minced
    • 1 tablespoon fresh sage, finely chopped
    • 2 teaspoons fresh rosemary, finely chopped
    • 1 tablespoon fresh parsley, finely chopped
    • 1/2 teaspoon each salt and black pepper
    • Vegetables:
    • 1 onion, quartered
    • 2 carrots, cut into chunks
    • ½ pound baby potatoes, whole
    • 2 ribs celery, coarsely chopped
    • Pan Sauce: Leftover drippings from roasting tray
    • 4 tablespoons unsalted butter, cold
    • 2 teaspoons Dijon mustard, Chopped parsley

    1. Preheat oven to 400F.

    2. Make a bouquet garni of thyme and rosemary. Stuff the chicken with the lemon and bouquet garni. Tie the chicken with butcher twine to bring the wings into the breast and the legs taught so the stuffing does not come out.

    3. To prepare herb butter, combine butter, herbs, salt and pepper in a food processor; pulse until combined.

    4. Place onion, celery, carrot and potatoes on the bottom of a roasting pan. Rub the chicken down with the herb butter and place on the roasting rack over the vegetables.

    5. Roast chicken 10–15 minutes until the skin starts to brown. Lower the oven to 375F and continue cooking for another 45 minutes to an hour, or until a thermometer placed into the thickest part of the thigh reads 155F. Allow the chicken to rest.

    6. While resting pour the pan drippings into a skillet and add the butter, Dijon and parsley. Stir on low heat until the sauce thickens. Place vegetables on a platter. Top with cut-up chicken and serve with pan sauce.
