Dry Ingredients
- 1 cup whole wheat flour
- 1 cup all purpose flour
- 1/2 cup honey
- 1/4 cup ground flax
- 3/4 teaspoon baking soda
- 1 teaspoon pumpkin pie spice
- 1 teaspoon cinnamon
- 1 teaspoon ginger
- 1/8 teaspoon cardamom
- 1/4 teaspoon nutmeg
Wet Ingredients
- 1/4 cup butter, melted
- 2 large eggs
- 1 (15 ounce) can pumpkin
- 1 (6 ounce) container plain greek yogurt
Preparation
- Combine dry ingredients in large bowl; mix well.
- Stir wet ingredients together in separate bowl, then pour into dry mixture and stir until combined.
- Pour batter into two (lightly-sprayed) loaf pans.
- Bake at 350°F for 25-35 minutes or until wooden toothpick inserted in center comes out clean.
- Cool 10 minutes on wire rack; remove from pan.
- Cool completely on wire rack.
