Philip Krajeck’s Tomato Wine Vinegar

Use this vinegar in pasta dough as Philip does, salad dressings or any summer dish.
Ingredients
Tender tomato vines
Champagne or white wine vinegar
Preparation

Collect some tender tomato vines, wash and dry thoroughly. Break them up by hand to release the aromas.
Place in a clean glass jar, packing in tightly. Cover completely with your favorite vinegar (I like Katz Late Harvest Sauvignon Blanc vinegar).
Cover and leave at room temperature for a week. Strain and reserve at room temp.
