Philip Krajeck’s Tomato Wine Vinegar

Use this vinegar in pasta dough as Philip does, salad dressings or any summer dish.

    Ingredients

    • Tender tomato vines
    • Champagne or white wine vinegar

    1. Collect some tender tomato vines, wash and dry thoroughly. Break them up by hand to release the aromas.
    2. Place in a clean glass jar, packing in tightly. Cover completely with your favorite vinegar (I like Katz Late Harvest Sauvignon Blanc vinegar).
    3. Cover and leave at room temperature for a week. Strain and reserve at room temp.
