Lamb Burgers with Feta and Mint

Elaine likes to mix ground sausage with the ground lamb for flavor and ease.

Ingredients

SERVINGS: Makes 6 burgers.
  • 1 pound ground lamb (Belfair Farms)
  • 1/2 pound ground lamb sausage (Belfair Farms)
  • 4 ounces feta cheese, crumbled
  • 1/4 cup chopped fresh mint or rosemary
  • 1/2 cup chopped green onion
  • 2 cloves garlic, minced
  • salt and pepper
  • Arugula, feta, onions

Preparation

1. Combine all ingredients. Mix gently with hands. Shape into 6 patties. Grill or cook in a skillet until desired degree of doneness. Top with extra feta, arugula, onions and tomato.
