Honeyed Feta Tomato Dip

This easy, yummy dip took social media by storm in 2021. It has infinite variations, but is fantastic in this iteration too.

Ingredients

  • 1 pint cherry or grape tomatoes
  • 8 ounces sheets milk feta cheese, broken into pieces
  • red onion slivers
  • 2 garlic cloves, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon crushed red pepper flakes
  • Fresh thyme or basil

Instructions

1. Place tomatoes and feta cheese in a gratin dish. Toss in 2 chopped garlic cloves, a few red onion slivers and some red pepper flakes. Drizzle with olive oil and honey and sprinkle with fresh oregano. Bake at 400 for 45 minutes. Serve hot with crostini, pita, crackers, or pasta.
