Greens Braised with Pancetta and Apple Cider

But when a friend cooked farm fresh collard greens with pancetta, garlic, onion and apple cider, the aroma alone was mesmerizing.     Ingredients

    • 1 bunchcollard greens or turnip or kale
    • 2 ouncespancetta, chopped
    • 1/2 cupchopped onion
    • 2garlic cloves, chopped
    • 1 cupapple cider
    • salt and pepper

    1. Rinse and cut collard greens off stem. Discard stems.

    2.  Place pancetta in large pot. Saute 5 minutes. Add onion and garlic and saute 10 minutes. Add greens; stir. Add 1 cup apple cider and cook 20 minutes to 1 hour. Season with salt and pepper to taste.
