Garden Vegetable Salad With Blueberry Blasamic and Vegan Feta

    Ingredients

    • 8cups chopped garden lettuces
    • 1/2large watermelon radish, sliced thin
    • 2medium red radishes, sliced thin
    • 1medium purple carrot, sliced thin on a bias
    • 1small spring onion, white parts sliced into thin rings
    • 1/3 cupsliced almonds, for garnish
    • 1/3 cupcrumbled vegan feta cheese, for garnish (substitute sheep’s milk feta or chèvre if you can tolerate dairy)
    • Galena Garlic Blueberry Balsamic
    • Galena Garlic Tuscan Herb Olive Oil
    • sea salt and black pepper, to taste

    Preparation

    Divide all ingredients amongst 4 plates. Drizzle each with blueberry balsamic and olive oil to taste, sprinkle with salt and pepper and serve.
