Garden Vegetable Salad With Blueberry Blasamic and Vegan Feta

This recipe is from Galena Garlic and uses both their salad dressing and olive oil, which you can fin on their website here. 

    Ingredients

    • 8 cups chopped garden lettuces
    • 1/2 large watermelon radish, sliced thin
    • 2medium red radishes, sliced thin
    • 1medium purple carrot, sliced thin on a bias
    • 1 small spring onion, white parts sliced into thin rings
    • 1/3 cup sliced almonds, for garnish
    • 1/3 cup crumbled vegan feta cheese (or sheep’s milk feta or chèvre)
    • Galena Garlic Blueberry Balsamic
    • Galena Garlic Tuscan Herb Olive Oil
    • sea salt and black pepper, to taste

    Preparation

    Divide all ingredients amongst 4 plates. Drizzle each with blueberry balsamic and olive oil to taste, sprinkle with salt and pepper and serve.
