Ingredients
- 5 cups bread flour
- 2 cups cake flour
- 1½ tablespoon sugar
- 1½ tablespoon kosher salt
- 1½ tablespoon active yeast
- 2 tablespoons olive oil
- 3½ cups warm water
- Za’atar*
- Flour or corn meal for pizza peel
- Olive oil for brushing onto cracker
- 2 tablespoons minced fresh thyme (dry OK if that is what is available)
- 3 tablespoons sesame seeds
- 2 teaspoons ground sumac
- 2 teaspoons coarse salt
Preparation
1. Place all ingredients except the za’atar into the bowl of a stand up mixer with paddle attachment; mix well.
2. Place dough into a large plastic container and put the lid on loosely. Let the dough rise until it touches the lid (30 minutes to 2 hours).
3. Once the dough has risen, refrigerate until ready to use. Place baking stone onto middle rack of oven. Preheat oven to 450 F.
4. Grab a piece of dough about the size of an orange. Dust it with a bit of flour and, using a rolling pin, roll it out very thin, turning occasionally and rolling from the other side. Sprinkle with Za’atar and roll the spice into the dough.
5. Transfer to a flour-dusted pizza peel and place onto hot baking stone. Cook for 5-7 minutes and brush with olive oil. Cook for another 10-12 minutes until the cracker is crunchy. When it cools, break it into pieces and enjoy with your favorite dip!
