Caramelized Onions

In the Edible Kitchen, onion season means caramelized onions. A couple pounds of onions will cook down to velvety, brown sweeteness that’s a great addition to pasta, pizza and sandwiches. 

    Ingredients

    • 2 tablespoonsolive oil
    • 4onions
    • 1 tablespoonsugar
    • salt and pepper to taste

    1. Peel and slice onions and cut into halves and slice thinly. Heat oil in a heavy skillet (preferably cast iron) and add onions, salt, pepper and sugar. Saute 30 minutes or until browned, stirring frequently. Cover and cook on low for 10 minutes to soften.
