Caprese Strata with Cheddar and Corn

With fresh garden cherry tomatoes, aromatic basil, and sweet corn from the cob, this is Sumer in a dish! Piled into a gratin dish and covered with a custard, this is perfect for breakfast, lunch or dinner. It also lends itself to infinite improvs. Use any kind of cheese and herbs and even add ham. It also works with any kind of bread, but we used a local homemade sourdough from Spread Market.

    Ingredients

    • 6 slices bread (stale or fresh), crumbled
    • 4 ounces sharp cheddar cheese, grated
    • 3 ounces sliced buratta cheese, torn into pieces
    • 1 cup or 20 cherry tomatoes, halved
    • handful fresh basil, torn
    • 1/3 cup fresh corn kernels cut from cob
    • salt and pepper
    • 5 eggs
    • 1 cup half and half, cream ,or milk

    1. Preheat oven to 350F. Place bread in a 6-cup buttered gratin or shallow baking dish. Top with cheeses, tomatoes, basil, corn salt and pepper.

    2. Whisk eggs and milk (or half-and-half). Slowly pour over bread mixture, pressing down to make sure everything is moistened. Bake 30-40 minutes or until custard is set and golden brown. Serve immediately or at room temperature.
