Ingredients
- 2 tablespoons butter
- 8 apples (about 2 ½ pounds), peeled and chopped
- 1 cup sugar
- 1 ½ tablespoons cornstarch
- 1 teaspoon cinnamon
- 2 teaspoons lemon juice
- 2 cups flour
- 1 teaspoon salt
- 8 ounces leaf lard or Crisco
- ½ cup whole milk
Preparation
1. To prepare filling, melt the butter in a large skillet. Add apples, sugar, cornstarch, cinnamon, and lemon juice. Remove from heat. Cool.
2. To prepare dough, place flour and salt in bowl of food processor. Pulse. Add lard or shortening and pulse until mixture looks like coarse sand. Add milk and pulse until mixture just comes together. Turn out onto a floured surface and roll dough into a 13-inch round. Using a 4-inch pastry cutter or glass, cut out dough. Reroll scraps and cut out again. Should make 8-12 individual rounds.
3. Preheat oven to 350ºF. Place 2 tablespoons apple filling in each circle of dough and fold over to create a crescent shape, sealing edges with milk and crimp. Make a slice in top of each pie to vent. Heat 2-inches of vegetable oil in a large skillet. Immerse pies in hot oil and fry until golden, about 10 minutes. Alternatively, place on baking sheet and bake 30 minutes or until golden.
