Blueberry Spinach Salad with Raspberry Balsamic Vinaigrette

This light, fresh salad is part of the delicious and nutritious meals coming out of The Heimerdinger Foundation.

    Ingredients

    • 6cups arugula
    • 1/2cup almond cheese, crumbled
    • 1/4cup walnuts, toasted
    • 1/2cup fresh blueberries
    • 1/4cup frozen raspberries, thawed
    • 1/4cup balsamic vinegar
    • 1/4cup flax oil
    • 1/2cup olive oil
    • 1teaspoon Dijon mustard
    • 1teaspoon honey
    • salt to taste

    1.  To prepare salad, combine all ingredients in large bowl and toss. Divide onto four plates.

    2.  To prepare vinaigrette, add all ingredients to blender and puree until emulsified. Drizzle vinaigrette on each salad.
