David is the founder of Henosis, an organic mushroom company that helps homeowners “upcycle” dead wood into gourmet fungi. They inoculate the wood with spores that grow into mushrooms. “Mushrooms can have a lot of beneficial impacts,” David says. “They’re a pioneering species, increasing beneficial insects and improving the soil-food web by breaking down the lignin in the wood.” In addition, David and his team take sawdust from local mills to grow such tasty treats as Pioppinos and King Oysters.
