Ultimate Spring Salad by McKel Hill

Spring and early summer are for tender leaves of lettuce gently unfurling from the dirt. “Spring mix,” frequently found in bags at the farmers market, is worlds away from a pile of iceberg. Its mix of delicate greens of different shapes and sizes frequently brings bitter, sharp, and peppery flavors. It’s best to use immediately and with its nuanced tastes, dress simply.

A simple mix of good quality oil and vinegar will do the job. Plain balsamic and olive oil, while wonderful, aren’t even all there is anymore- both come in exciting and unique flavors to mix and match for a variety of tasty combinations.

If you want to reach for a dressing, we have two here worthy of their green mates; a creamy, bright ranch from Little Fib’s own Chef James Kerwin and a simple vinaigrette. The French Ranch Dressing is worlds away from that found in a bottle when made with fresh herbs, real buttermilk, and sour cream.

Then there is a hard-working vinaigrette with a hint of honey. This dressing will prove to be your go-to for vegetables, grains, and greens or anything that needs a dressing.
