Mee McCormick was meeting with the new chef of their newly acquired restaurant that sat adjacent to their property and ranch in Pinewood, TN. After hearing his philosophy on cooking (mostly sourcing from big box companies for the best price), Mee penned an email to him.

It was lovely to meet you today. After our conversation I am completely inspired. I have decided that I will be running Pinewood Kitchen and I will also be the head chef. We will no longer need your services.”

Mee has done a lot in her lifetime. Stylist, bartender, culinary school graduate, writer, TV show personality, health guru, restaurant owner and chef are just some of the titles she can boast. In Mee’s new book, My Pinewood Kitchen, 130+ Crazy Delicious, Gluten-Free Recipes to Reduce Inflammation and Make Your Gut Happy she recounts her path to a healthy diet and Pinewood Kitchen. It’s a path full of second thoughts, hesitations, courage, love, and good food. 

Located in tiny Pinewood, TN (next to Nunnelly), Mee has been cooking healthy food with local organic products (like beef grown on their ranch) in the Kitchen since 2015. It’s a gathering place; A community where you can get a full-on rib-eye dinner with fries or a bean burger.
