Best Nachos in Nashville
In a restaurant tucked away in the WeHo (Wedgewood Houston) neighborhood with a prix fixe menu costing upwards of $200 with wine, is where you’ll find the best nachos in town. Chef Josh Habiger opened Bastion in 2016 after a three year stint at The Catbird Seat.
“We wanted to do one thing and do it right,” says Josh. “Nachos is something nobody puts enough love into. When you put love into them, they are so good and satisfying.”
The nachos are the only menu item and come with your choice of pulled pork or vegetarian chorizo (a mixture of cauliflower, sundried tomato and black beans). The sturdy, homemade La Hacienda chips support your choice of topping, plus a winning combination of creamy queso cheese sauce and Cotija cheese, house pickled veggies, a dollop of sour cream and cilantro. The nachos are served with two hot sauces, a roasted red and raw green, held in a caddy marked by a colorful balloon. Josh favors the green tomatillo salsa for its fresh, bright flavor profile. We can’t argue with that.
A Tecate dressed up with chili salt and hot sauce compliments the flavors of the crunchy, salty, perfectly layered dish so order both and make it a meal.
