Resolution BBQ Sauce

At the Diskin cidery,  this bbq sauce made with Resolution, their fall seasonal cinnamon spice cider, is served with smoked cider-braised pork on nachos along with bacon fat refried beans, poblano queso, pickled red onion, and tomatillo salsa. At home, enjoy as a dipping sauce with chicken or pork.

    Ingredients

    • 1tablespoon olive oil
    • 1/4white onion, minced
    • 3cloves garlic, minced
    • 115-ounce can diced tomatoes
    • juice of 1/2 lemon
    • 2tablespoons Worcestershire
    • 1/4cup brown sugar
    • 1/2teaspoon cinnamon
    • 1tablespoon salt
    • 1 1/2teaspoons pepper
    • 8ounces Diskin Resolution cider
    • 1cup ketchup

    1.  Heat oil in 1-quart saucepan. Add onion and garlic and cook, stirring occasionally, until onions are translucent. Add tomatoes, lemon juice, Worcestershire, brown sugar, cinnamon, salt, and pepper. Bring to a boil then reduce to a simmer.

    2.  Add cider and ketchup. Simmer 15-20 minutes on low until desired consistency. Cool and refrigerate.
