Watermelon with Burrata and Frisse

Burrata is a ball of mozzarella like cheese filled with cream and more cheese which oozes out when cut into. It comes in a plastic tub packed in brine. Look for it at Trader Joe's and Whole Foods. The creamy Burrata and the crisp juicy watermelon are a match made in heaven.

Ingredients

  • 1” thick slice watermelon, cut into a 8-inch circle or wedges
  • 4 ounce ball burrata cheese
  • 2 ounce baby frisee lettuce or arugula
  • 1 tablespoon fig or balsamic vinegar
  • 1 tablespoon extra virgin olive oil
  • Salt and pepper
  • Basil leaf

Preparation

Lay watermelon slice on salad plate. Top with burrata cheese. Toss frisee or arugula witholive oil, salt and pepper. Drizzle burrata with fig or fruity balsamic vinegar and a littleextra virgin olive oil and garnish with dressed frisee. Garnish with basil.
