Egg Salad with Chives

Egg salad may be one of the simplest recipes, yet the hardest to do right. Cooking the perfect hard boiled egg can be a feat in itself. Here's our no-proof method: Place eggs in a saucepan, cover with water, place over med-high heat, time for 15-17 minutes, remove from heat, immediately place under cold running water (to stop the cooking). Ingredients

  • 6 hard boiled eggs, peeled
  • 1/3-1/2 cup Hellmans Mayonnaise (or Dukes, if your Southern)
  • 1/4 cup chopped fresh chives (or green onion)
  • salt and pepper to taste

Preparation

1. Place peeled eggs in bowl. Chop with a knife agains side of bowl. Add mayo, chives, salt and pepper.
