Brussels sprouts with White Balsamic Vinaigrette

Ingredients

  • 1 pound Brussels sprouts, cleaned
  • 2 tablespoons canola oil
  • 1/3 cup white balsamic vinegar
  • 1/2 cup extra virgin olive oil
  • 2 tablespoons honey
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon dried garlic powder
  • salt and pepper, to taste
  • 2 tablespoons feta
  • 1 tablespoon cooked, chopped bacon

Preparation

1.  Preheat oven 400F. Combine Brussels sprouts and canola oil on a roasting pan. Roast 20-25 minutes, or until tender. 

2.  In large bowl, combine vinegar, olive oil, honey, mustard, Italian seasoning, garlic powder, and salt and pepper. 

3.  Add Brussels sprouts to prepared vinaigrette and toss. Top with feta and bacon.
