Cynthia Despot of Jocelyn Hollow Moonshine Cake Co. with her Moonshine Cake--5 pounds of heaven.

“Folks say my cake tastes like a pecan pie ran into a Krispy Crème Donut,” says Cynthia Despot (pronounced DES-pit), owner and baker of Joceyln Hollow Moonshine Cakes. We would beg to differ as anything that tastes this damn good shouldn’t be equated with a donut.  

We’re not sure who weighs more, Cynthia at a petite 5’1” or her cake, at 5 pounds plus. She worked for the city of Forest Hills for over 17 years. One day, she got to talking with her neighbor who was heading out to Georgia to invest in a moonshine company. She returned with some of Grandaddy Mimms Moonshine. Cynthia took a swig and said, I’m going to make a cake with this. And the moonshine cake was born. She uses the Apple Brown Betty moonshine exclusively in the cake, which is the only ingredient she will divulge. That and pecans, of course. She’s been making her cakes since last year and sending them to friends and family in and out of  the city “I’m like Johnny Appleseed.” She laughs. Cynthia was never a baker, in fact she jokes that she “used to keep finger nail polish in her refrigerator.” We’re sure glad she took up baking, as this cake is some of the best stuff we’ve put in our mouths. Having it on hand for family and friends over the holidays will brighten up everyone’s holidays. Much better than donuts, we might add.
