Watermelon Cucumber Salad with Feta and Mint

Summer in a bowl from our first farm dinner in 2017. 

    Ingredients

    • 4 cupscucumber, seeded, peeled, and cubed
    • 4 cupscubed watermelon
    • 1/4 cupslivered red onion
    • 1 cupnoble springs goat feta cheese or your favorite feta
    • 1/2 cuptorn fresh mint leaves
    • 2basil leaves, chiffonade (sliced thinly)
    • 1/3 cupfresh lime juice
    • 2/3 cupolive oil
    • 1 teaspoonsalt
    • 1/2 teaspoonpepper
    • 2minced mint leaves

    Combine cucumber, watermelon and red onion. To make the dressing, whisk ingredients together. Just before serving, add dressing to watermelon mixture, toss gently and top with feta cheese. Add chopped herbs to garnish. (Don’t mix this salad ahead of time as the watermelon and cucumber will water out and you will have soup!)
